Salmon and Egg Stuffed Avocado
Salmon and Egg Stuffed Avocado Recipe:
Ingredients:
2 ripe avocados
2 eggs
1/2 cup cooked salmon (flaked)
1 tablespoon olive oil
1 tablespoon lemon juice
Salt and pepper to taste
Fresh herbs (such as chives or parsley) for garnish
Instructions:
Preheat the Oven: Preheat your oven to 375°F (190°C).
Prepare the Avocados: Cut the avocados in half and remove the seeds. Scoop out a small portion of the flesh from each avocado half to create a larger well for the filling.
Flake the Salmon: If you haven't done so already, cook and flake the salmon. We recommend using leftover cooked salmon or cook it specifically for this recipe to make this a quick and easy breakfast! Place it in the scooped out area of the avocado.
Crack the Eggs: Crack one egg on top of the salmon into the avocado. Season the eggs with salt and pepper.
Bake: Place the filled avocados in the preheated oven and bake for about 10-15 minutes or until the filling is heated through. Remove the stuffed avocados from the oven and garnish with fresh herbs, such as chopped chives or parsley.
