Apple, Turkey Pecan Stuffed Acorn Squash
INGREDIENTS:
1 lb organic ground turkey
1 acorn squash
1 yellow onion
1/2 apple peeled & chopped
3 T olive oil
1/4 cup toasted pecan halves
1 celery stalk
Salt & Pepper
1/2 cup of bone broth
1/2 tsp of thyme
2 gloves fresh garlic, pressed
1 tsp cinnamon
1 tsp honey
INSTRUCTIONS:
Preheat Oven to 400 F & cut acorn squash in half/ scoop out seeds.
Brush acorn squash with olive oil, garlic, salt & pepper & bake for 50 minutes
Add ground turkey, remaining olive oil, salt, pepper, & garlic to a skillet & brown.
Remove cooked turkey from skillet & add chopped onion, thyme, apple, & celery and cook for 3-4 minutes.
Add ground turkey back to the pan with bone broth & cook for another 3 minutes.
Stuff acorn squash with skillet mix.
Place in oven & bake for 15 min.
Brown pecans with honey & cinnamon for 5 minutes in skillet.
Top stuffed squash with pecans & enjoy!
