Lentil Yogurt Salad

Ingredients:

  • ¾ cup dry lentils

  • 3 cups spring veggies- we like asparagus, radishes, snap peas, peppers, and swiss chard.

  • 2 tablespoons olive oil

  • 1 lemon, zest & juice

  • 1 teaspoon sumac

  • 3 tablespoons red onion chopped

  • 2 garlic cloves minced

  • ¼ cup chopped mint leaves

  • salt and pepper to taste

Yogurt Sauce:

  • 1 cup plain Greek yogurt

  • 1 tablespoon lemon juice

  • 2 tablespoons fresh chopped mint

  • 2 garlic cloves finely minced

  • ½ teaspoon sumac

  • 1/4 teaspoon salt

Instructions:

  • Cook the lentils.

  • Lightly grill the veggies. (If using chard, finely chop and wilt in a pan with a little olive oil, shallot or garlic, and salt and pepper.

  • Place the lentils, veggies, onion, garlic, and mint in a bowl. Toss with olive oil, lemon zest and juice form ½ a lemon. Season with salt, pepper, and sumac.

Make the Yogurt Sauce to lather on the bottom of the plate and enjoy!
