Lentil Yogurt Salad
Ingredients:
¾ cup dry lentils
3 cups spring veggies- we like asparagus, radishes, snap peas, peppers, and swiss chard.
2 tablespoons olive oil
1 lemon, zest & juice
1 teaspoon sumac
3 tablespoons red onion chopped
2 garlic cloves minced
¼ cup chopped mint leaves
salt and pepper to taste
Yogurt Sauce:
1 cup plain Greek yogurt
1 tablespoon lemon juice
2 tablespoons fresh chopped mint
2 garlic cloves finely minced
½ teaspoon sumac
1/4 teaspoon salt
Instructions:
Cook the lentils.
Lightly grill the veggies. (If using chard, finely chop and wilt in a pan with a little olive oil, shallot or garlic, and salt and pepper.
Place the lentils, veggies, onion, garlic, and mint in a bowl. Toss with olive oil, lemon zest and juice form ½ a lemon. Season with salt, pepper, and sumac.
Make the Yogurt Sauce to lather on the bottom of the plate and enjoy!
