Healthy Loaded Baked Potato Slow-Cooker Soup

Ingredients:

  • 6 large Red Bliss Potatoes, cubed

  • 40 ounces low-sodium bone broth

  • 1-teaspoon black pepper

  • 1/8 teaspoon red pepper flakes

  • 6 carrots, peeled sliced

  • 1/2 yellow onion, diced

  • 2 cloves garlic, peeled and minced

  • 2 tablespoons olive oil

  • 1 teaspoon basil 

  • 1 teaspoon dill

  • 11/2 cups plain fat free Greek yogurt

  • 11/2 cups low-fat cheddar cheese

  • 2 tablespoons chives

 

Garnish with:

  • Plain Greek Yogurt

  • 1-pound turkey bacon, cooked and crumbled

  • green onions, thinly sliced

  • chives, chopped

Instructions

  1. Spray the inside of slow cooker with cooking spray and set the temperature to HIGH.

  2. Pour potatoes, bone broth, pepper and red pepper into the slow cooker.

  3. Sauté sliced carrots, onions and garlic in olive oil 3 minutes and add to mixture.

  4. Cook on high for 2-3 hours or until potatoes have softened.

  5. Add herbs, Greek yogurt, cheese and chives. 

  6. Garnish with Greek yogurt, turkey bacon, extra cheese and chives.


Per serving (1 cup): 220 calories; 4g fat; 1 g saturated fat, 28g carbohydrates; 1g total sugars; 3g fiber; 7g protein; 620 mg sodium
