Italian Breakfast Lasagna

Ingredients

  • ½  T olive oil

  • 1 red bell pepper, diced

  • 1 tomato, diced

  • ½ cup sliced mushrooms

  • 1 t garlic powder

  • ½ t basil

  • ½ t oregano

  • ⅛ t red pepper flakes

  • 3 cups baby spinach

  • 1 pack whole wheat English muffins 

  • 3 links fully cooked turkey sausage

  • 5 eggs & 4 egg whites

  • ½ cup milk

  • ¼ cup shredded Parmesan cheese

  • ½ cup mozzarella shredded cheese

Instructions

  1. Preheat the oven to 375° F. Spray a 13x9-inch casserole dish, set aside.

  2. Add olive oil, red bell pepper, tomatoes and mushrooms to skillet over medium heat and cook for 8-10 minutes. Add the spinach, garlic powder, basil, oregano, salt, red pepper flakes, and black pepper and cook for 3-5 minutes.

  3. Lie English muffins on the bottom of the casserole dish.

  4. Place turkey sausage over the English muffins, and spread cooked vegetables over the sausage.

  5. Whisk together the eggs, egg whites, and milk. Pour the egg mixture over the cooked vegetable layer. Top the casserole with the cheeses.

  6. Bake covered in foil for 20 minutes, then 15 minutes uncovered.
