Avocado, Black Bean Corn Salad
Ingredients (4 servings)
1, 15-ounce can low-sodium black beans, drained and rinsed
1 ripe Roma tomato, diced
1 ripe avocado, peeled and diced
1/2 red onion
1 orange pepper
3/4 cup frozen, rinsed corn (TJ’s frozen roasted corn is on point!)
6 T lime juice
Pepper for taste
Instructions
Combine all ingredients in a large bowl; pour lime juice over ingredients and garnish with pepper for taste
