Avocado, Black Bean Corn Salad

Ingredients (4 servings)

  • 1, 15-ounce can low-sodium black beans, drained and rinsed

  • 1 ripe Roma tomato, diced 

  • 1 ripe avocado, peeled and diced 

  • 1/2 red onion

  • 1 orange pepper

  • 3/4 cup frozen, rinsed corn (TJ’s frozen roasted corn is on point!)

  • 6 T lime juice

  • Pepper for taste

 

Instructions

  • Combine all ingredients in a large bowl; pour lime juice over ingredients and garnish with pepper for taste

Per serving ( ½ cup): 140 calories; 2g fat; 10 g carbohydrates; 3 g total sugars; 3g fiber; 4g protein; 290 mg sodium
