Sweet Potato Black Bean Chili

Ingredients:

  • 1 tablespoon olive oil

  • ½ pound sweet potatoes, peeled and diced

  • 1 yellow onion, chopped

  • 1 green bell pepper, chopped

  • 4 garlic cloves, minced

  • 2 tablespoons chili powder

  • 1 teaspoon cumin

  • ¼ teaspoon cayenne

  • 2 cans (14.5 oz. each) diced tomatoes w/ chiles

  • 1 can (15 oz. each) black beans, rinsed/drained

  • 1 lb. lean ground turkey 

  • 2-3 cups low sodium chicken broth

Directions: 

  1. Heat oil and add sweet potato and onion and cook, stirring often for about 4 minutes. Add garlic, chili powder, cayenne, & cumin, stirring constantly for 30 seconds. Add water and bring to a simmer. Cover, reduce heat to maintain a gentle simmer and cook until the sweet potato is tender, 10 to 12 minutes.

  2. Add beans, tomatoes, cooked ground turkey and diced tomatoes w/ chiles; increase heat to high and return to a simmer, stirring often. Reduce heat and simmer until slightly reduced, about 5 minutes. 

Per serving (1 cup): 300 calories; 4 g Fat; 1 g Sat Fat; 30 g Carbs; 0 g Sugar; 15 g Protein; 14 g Fiber; 280 mg Sodium
